Pretty Pink Sandwich Cookies start with simple ingredients like butter, sugar, eggs, and vanilla. Finished with a simple vanilla buttercream and a pop of pink make them extra fun and irresistible!
3 ½cupall-purpose flour plus more for rolling dough
Pink food coloring as needed
Vanilla Icing
2cupspowdered sugar
½cupunsalted butter
½tspvanilla extract
1-3tspmilk as needed
Instructions
In a large bowl, cream together the butter and sugar with an electric mixer on medium speed.
Add the eggs, vanilla, and salt. Continue blending until thoroughly combined. Add in desired amount of food coloring.
Slowly add the flour, mixing just until combined. Cover the dough and place in the refrigerator for one hour.
While the dough is chilling, preheat the oven to 350 degrees and line two baking sheets with parchment paper.
Remove dough from the refrigerator and roll out onto a floured surface about a ½ inch thick and cut into desired shapes. Place shapes onto a baking sheet lined with parchment paper.
Bake for 10-12 minutes or until the cookies are set.
Meanwhile, prepare the icing by combining the powdered sugar, unsalted butter, milk, and vanilla in a bowl and beating with an electric mixer on low until smooth.
When the cookies are completely cooled, pipe the icing on the bottom of a cookie and top with an additional cookie. Serve & enjoy!

These pink sandwich cookies stay fresh 3–4 days at room temperature in an airtight container—keep layers separated with parchment to protect the icing.They freeze well unfilled for up to 2 months; thaw, then add the icing before assembling.
