Reese’s Chocolate Cookie Cups feature a rich, buttery cocoa cookie base topped with a miniature Reese’s Peanut Butter Cup for the perfect chocolate and peanut butter bite!
Preheat the oven to 350° F. Spray a mini muffin pan with non-stick spray, set it aside.
In a large bowl, cream the butter and both sugars together for about 2-3 minutes with an electric mixer. Add the eggs and vanilla, continue to mix for 2-3 more minutes.
In a separate bowl, combine the flour, cocoa, baking soda, and salt and mix well. Add the dry ingredients to the wet ones and mix just until combined.
Use a cookie scoop to scoop the dough into the mini muffin pan. You don't need to shape the dough, just scoop it in there!
Bake for 6 minutes and then take the pan out of the oven. Press a miniature Reese's Peanut Butter cup into each cookie cup until the top of it is flush with the top of the cookie. Place back in the oven for 2 minutes.
Let the cookie cups cool for a few minutes in the pan before removing. Let them cool completely on a wire rack. Serve & enjoy!
