Tips for making 3 Ingredient Cake Mix Cookies
Let the dough rest before scooping: Giving the dough a few minutes to sit helps it firm up slightly, making it much easier to scoop and roll without sticking.
Pull the cookies when they’re just set: Take them out when the tops lose their glossy look but before they start to brown—this keeps them soft and cake-like.
Cool completely before icing: Even slightly warm cookies will cause the icing to melt and slide, so patience here pays off with a prettier finish.
How long are these frosted cookies good for?
These cookies stay fresh for 3–5 days at room temperature when stored in an airtight container. If they’re iced, it’s best to keep them in a single layer or with parchment between layers so the icing stays pretty.
They also freeze really well, especially before icing. Freeze the baked, cooled cookies in an airtight container or freezer bag for up to 2 months. When you’re ready to use them, let them thaw at room temperature, then decorate for a fresh-baked look and taste.
Valentines Cake Mix Cookies
Valentine’s Cake Mix Cookies made with white cake mix, egg whites, and coconut oil—plus a festive finish of icing and sprinkles! Soft, sweet treats that are perfect for your Valentine.
Preheat the oven to 350° F. Line two baking sheets with parchment paper and set aside.
Using an electric mixer, combine the cake mix and egg whites. The texture of the mixture will be similar to wet sand.
Add the coconut oil to the cake mix mixture, combine until smooth. The cookie dough will be very thick and slightly sticky.
Allow the cookie dough to rest for a couple of minutes, this will make scooping and rolling easier. Scoop the cookie dough and then roll each ball to smooth the edges before arranging them on the parchment paper-lined cookie sheet.
Bake for 8-10 minutes, pulling them out when the cookies are puffy and the tops are no longer glossy. Let cool for 3-4 minutes on the cookie sheet, then transfer them to a cooling rack.
Whisk icing ingredients together until smooth. Add food coloring if desired. Spoon on top of cooled cookies, topping with Valentines candy and sprinkles, if desired. Let the icing set, then serve & enjoy!
