Have you heard of Palmiers? Also called Elephant Ears, these delicate French pastries are crispy, buttery sweet cookies that go perfectly with tea or hot chocolate. They used to be unheard of, but these days they sell them at Costco! This simple recipe takes the hours of work out and makes simple work of French cookies. Two ingredients! You can get fancy and drizzle or dip them in chocolate. I’m a purist and love to eat them as they are. They look gorgeous on holiday cookie trays!
Puff Pastry Palmiers recipe
Here’s what you need:
17.3 oz box puff pastry: Each box contains 2 sheets of pastry, which will each yield 15 Palmiers.
3 cups granulated sugar: You will need a lot of white sugar for this recipe, but you will also have a lot of leftovers. It’s up to you if you’d like to reuse it! (We do in my kitchen!)
How to make these Palmier Pastries
Thaw your puff pastry on the countertop and preheat your oven to 400 degrees F. Line a baking sheet with parchment paper.
Coat your table or counter in sugar and lay your puff pastry sheet on the top of the sugar. Turn the pastry over and add more sugar to coat both sides, gently pressing it in to uncoated areas.
Tuck and roll one side to the middle, and then the other side. Repeat so that you have a little tube of pastry.
Cut into 1/3″ pieces and roll them around in more sugar before laying onto a prepared baking sheet.
Bake for 10-15 minutes until pale brown on top and a darker brown on the bottom.
Cool for 10 minutes on the tray. Transfer to a cooling rack to cool completely.
Tips for making these Elephant Ears
- While these may not be the same elephant ears that you can get and enjoy from your local fair, they are delicious none-the-same. If you’re looking for a cinnamon twist to fix your flavor cravings, you can add in 2 or 3 teaspoons of cinnamon to your sugar mix and follow as directed in the recipe. This can help to give you the best of both worlds, so to speak.
- You will need a lot of sugar for this recipe, but you will also have a lot of leftovers. If this is a recipe that you plan on making often, consider reusing the sugar that you can to help reduce your costs later.
If possible, use a wide table instead of a counter so that you have more space to roll out your sugar and pastry dough. This can help to keep most of the sugar mess contained. - Each pastry sheet will make about 15 elephant ears (Palmiers). Most boxes of puffed pastry have about 2 sheets per box.
- *I will note that although I’ve made these a number of times, I’ve yet to figure out how to keep them all tucked in and pretty when they bake. Some open all wonky… But that just means I can eat those (hence, why I’ve never really sought a “solution” to this “problem.” 🙂
Can you freeze Palmiers?
You can freeze leftover Palmiers after they have cooled down completely from baking. You will want to thaw them and re-crisp them before serving. You may notice that the sugar coating has dissolved, in which case you may wish to add a sprinkling of sugar to these pastries before eating.
Can you reheat Palmiers?
There’s no denying that once you try this delicious pastry warm and fresh you’re going to want to eat it that way often, so reheating is a great way to bring back that taste, smell and feel. Reheating is also a great way to bring the crispness back to the pastry after freezing. Place your Palmiers on a baking sheet and bake at 325 degrees F for 10 minutes until a golden brown. Enjoy!
How do you keep pastry crisp overnight?
Puff pastry is a delicate creature and one that requires care when storing to prevent it from getting soggy. Fresh pastries should be cooled to room temperature before being wrapped and sealed away to prevent condensation from forming and making the treat soggy. You can also choose to place the pastry in brown paper bags for storage on the counter to help retain the crispness.
