Puff Pastry Palmiers Ingredients
Puff pastry: Use one 17.3-oz box of frozen puff pastry. Each box contains two sheets, and each sheet makes about 15 Palmiers, depending on how thin you slice them.
Sugar: You’ll use quite a bit of white sugar to coat the pastry, which is what gives Palmiers their signature caramelized crunch. You’ll have leftovers—feel free to reuse it if you’re comfortable (we do!).
Helpful tips for making perfect Palmiers
Keep the pastry cold. Warm puff pastry gets sticky and won’t puff as well, so work quickly and chill the dough for a few minutes if it softens.
Use plenty of sugar. The extra sugar helps create the signature caramelized, crispy edges—don’t be shy when coating the pastry.
Space them well. Palmiers spread as they bake, so leave room on the baking sheet to prevent them from sticking together.
How long are these good for & how should I store them?
Palmiers stay fresh for up to 5 days when stored in an airtight container at room temperature. Keep them in a cool, dry place to maintain their crisp texture—moisture will make them soft.
If they lose some crunch, you can re-crisp them in a 350°F oven for 3–4 minutes.
Easy Palmiers Recipe
These Easy Palmiers are made with just puff pastry and sugar for the simplest French cookie ever. Crisp, buttery, and beautifully caramelized, they come together in minutes.
Thaw your puff pastry on the countertop and preheat your oven to 400 degrees F. Line a baking sheet with parchment paper.
Coat your table or counter in sugar and lay your puff pastry sheet on the top of the sugar. Turn the pastry over and add more sugar to coat both sides, gently pressing it in to uncoated areas.
Tuck and roll one side to the middle, and then the other side. Repeat so that you have a little tube of pastry.
Cut into ⅓" pieces and roll them around in more sugar before laying onto a prepared baking sheet.
Bake for 10-15 minutes until pale brown on top and a darker brown on the bottom. Cool for 10 minutes on the tray. Transfer to a cooling rack to cool completely. Serve & enjoy!

Keep them in a cool, dry place to maintain their crisp texture.Freeze them in an airtight container or freezer bag for up to 2 months. Thaw at room temperature, then crisp them in a 350°F oven for 3–4 minutes if needed.
You can freeze leftover Palmiers after they have cooled down completely from baking. You will want to thaw them and re-crisp them before serving. You may notice that the sugar coating has dissolved, in which case you may wish to add a sprinkling of sugar to these pastries before eating.
Simple Variation for Palmiers to try!
If you’re craving a cinnamon twist, simply mix 2–3 teaspoons of cinnamon into the sugar before coating the pastry. It adds warm flavor and gives you the best of both worlds.
Can you reheat Palmiers?
There’s no denying that once you try this delicious pastry warm and fresh you’re going to want to eat it that way often, so reheating is a great way to bring back that taste, smell and feel. Reheating is also a great way to bring the crispness back to the pastry after freezing. Place your Palmiers on a baking sheet and bake at 325 degrees F for 10 minutes until a golden brown. Enjoy!
