<p>My kids love making sugar cookies around Easter time and these are a quick &amp; easy compromise. The tops end up looking like darling little nests! Feel free to add a few flower sprinkles to the tops if you&rsquo;d like. </p>



<h2 class="wp-block-heading">Things to know about this recipe:</h2>



<ol class="wp-block-list">
<li><strong>It uses a sugar cookie mix</strong>, so you will need the butter and egg the mix requires to make cookies. Want to make life even easier? Use a tube of pre-made sugar cookie dough! </li>



<li><strong>You&rsquo;ll need some type of candy eggs and green jimmies</strong> for the top of each cookie. I love cadbury mini eggs, but you can use jelly beans instead. </li>



<li><strong>I stick the sprinkles and candy on the cookies with a simple white chocolate ganache.</strong> If you&rsquo;d like, you can just use melted white chocolate, or store-bought frosting instead. </li>
</ol>



<h2 class="wp-block-heading">Easter Sugar Cookie <strong>Ingredients</strong></h2>



<p><strong>For the Cookies:</strong></p>



<p>          <strong>17.5oz package Sugar Cookie Mix:</strong> I used a Betty Crocker mix, but use what you like! </p>



<p>          <strong>&frac12; cup butter &amp; 1 large egg</strong> are needed to make the cookies, as per the instructions on the package</p>



<p>         <strong> Vanilla extract:</strong> I added in some vanilla to improve the flavor of the cookies. </p>



<p><strong>For the White Chocolate Ganache:</strong></p>



<p>          <strong>4 oz white chocolate:</strong> It needs to be finely chopped. Alternately, you can use &frac12; cup white chocolate    chips, but know that the block of white chocolate tends to melt easier.  </p>



<p>          <strong>&frac14; cup heavy cream</strong></p>



<p><strong>For Easter Decorations:</strong></p>

<p>&mdash;&gt; <strong>Use your favorite store-bought sugar cookie mix</strong>, or you can make them from scratch if you&rsquo;d like. Here&rsquo;s our <a href="https://familycookierecipes.com/cream-cheese-sugar-cookies/">favorite soft sugar cookie recipe</a>. </p>



<p>&mdash;&gt; <strong>Don&rsquo;t skip making the white chocolate ganache!</strong> I opted for ganache instead of just melted chocolate because the consistency is softer, yet more stable than frosting. It&rsquo;s worth the extra 5 minutes, plus, you can make it while the cookies are baking and cooling. </p>



<p>&mdash;&gt; <strong>You can swap out the candy decorations on top for similar looks.</strong> Don&rsquo;t have green jimmies? Use chocolate! Love jelly beans or malted egg candy? Fantastic, use those instead! Use what you have and what you love. </p>



<h2 class="wp-block-heading">How do I store these Easter cookies?</h2>



<p>Store in an airtight container at room temperature for up to <strong>3 days</strong> or in the refrigerator for <strong>up to a week</strong>. If refrigerating, allow them to come to room temperature before serving.</p>

<p>Yes, you can fully assemble these cookies and freeze them in a single layer in an airtight container for up to 2 weeks. </p>



<p>You can freeze the baked cookies <strong>without ganache</strong> for up to <strong>3 months</strong>. When ready to serve, thaw them at room temperature and then add the ganache and decorations.</p>
