Easter Sugar Cookies made easy with a mix, baked & topped with a white chocolate ganache, sprinkles & chocolate eggs! Cute Easter eggs in a nest on simple buttery cookies!
My kids love making sugar cookies around Easter time and these are a quick & easy compromise. The tops end up looking like darling little nests! Feel free to add a few flower sprinkles to the tops if you’d like.
Things to know about this recipe:
- It uses a sugar cookie mix, so you will need the butter and egg the mix requires to make cookies. Want to make life even easier? Use a tube of pre-made sugar cookie dough!
- You’ll need some type of candy eggs and green jimmies for the top of each cookie. I love cadbury mini eggs, but you can use jelly beans instead.
- I stick the sprinkles and candy on the cookies with a simple white chocolate ganache. If you’d like, you can just use melted white chocolate, or store-bought frosting instead.
Easter Sugar Cookie Ingredients
For the Cookies:
17.5oz package Sugar Cookie Mix: I used a Betty Crocker mix, but use what you like!
½ cup butter & 1 large egg are needed to make the cookies, as per the instructions on the package
Vanilla extract: I added in some vanilla to improve the flavor of the cookies.
For the White Chocolate Ganache:
4 oz white chocolate: It needs to be finely chopped. Alternately, you can use ½ cup white chocolate chips, but know that the block of white chocolate tends to melt easier.
¼ cup heavy cream
For Easter Decorations:
- Green Jimmies sprinkles
- Tiny “flower” sprinkles
- Chocolate Mini Eggs
Tips for making the best Easter Sugar Cookies
—> Use your favorite store-bought sugar cookie mix, or you can make them from scratch if you’d like. Here’s our favorite soft sugar cookie recipe.
—> Don’t skip making the white chocolate ganache! I opted for ganache instead of just melted chocolate because the consistency is softer, yet more stable than frosting. It’s worth the extra 5 minutes, plus, you can make it while the cookies are baking and cooling.
—> You can swap out the candy decorations on top for similar looks. Don’t have green jimmies? Use chocolate! Love jelly beans or malted egg candy? Fantastic, use those instead! Use what you have and what you love.
How do I store these Easter cookies?
Store in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week. If refrigerating, allow them to come to room temperature before serving.
Can I freeze decorated Easter cookies?
Yes, you can fully assemble these cookies and freeze them in a single layer in an airtight container for up to 2 weeks.
You can freeze the baked cookies without ganache for up to 3 months. When ready to serve, thaw them at room temperature and then add the ganache and decorations.
What Can I use Instead of Mini Eggs?
Try using jelly beans instead! They add a fun pop of color and a chewy texture that kids love. Simply press 2–3 jelly beans into the ganache instead of Mini Eggs.
Can I use a different type of chocolate for the ganache?
Absolutely! While white chocolate gives a creamy and sweet contrast, you can use milk chocolate or dark chocolate if you prefer a richer flavor. Just know that the color of the chocolate tends to peek through the cookie toppings a bit.
