<p>I love the combination of chocolate and mint and have tried many recipes that combine these two flavors. I think these Frosted Mint Chocolate Cookies might be my current favorite. They taste so much like the Girl Scout Thin Mints, which I am obsessed with! These cookies have the perfect amount of chocolate flavoring and peppermint. </p>

<h2 class="wp-block-heading">Ingredients in Frosted Mint Chocolate Cookies</h2>



<p><strong>CHOCOLATE COOKIES</strong></p>



<p><strong>Butter</strong> &ndash; You will need one stick of butter, softened to room temperature. For best results, use real butter. </p>



<p><strong>Sugar </strong>&ndash; You can&rsquo;t make cookies without sugar! You will only need white granulated sugar for these cookies.</p>



<p><strong>Vanilla extract</strong> &ndash; The higher the quality of the vanilla, the better. </p>



<p><strong>Egg</strong> &ndash; One large egg will bind all of the other ingredients together. </p>



<p><strong>Flour</strong>&nbsp;&ndash; All-purpose flour works best in this cookie recipe. A gluten-free substitute will work if needed. </p>



<p><strong>Cocoa powder</strong> &ndash; Unsweetened cocoa powder provides the chocolate flavor to the cookies. </p>



<p><strong>Baking soda</strong>&nbsp;&ndash; Baking soda is the leavening agent in the cookies. For best results, make sure the baking soda isn&rsquo;t old or expired.</p>



<p><strong>Salt</strong>&nbsp;&ndash; Just a little bit of salt will help all of the other flavors to pop.</p>



<p><strong>MINT FROSTING</strong></p>



<p><strong>Butter</strong> &ndash; Again, the butter should be softened to room temperature before adding to the other ingredients. </p>



<p><strong>Powdered sugar</strong> &ndash; Powdered sugar creates a perfectly smooth and sweet frosting. </p>



<p><strong>Milk</strong> &ndash; You will need about a tablespoon of milk to thin out the frosting to a spreadable consistency. You can add a little more or a little less based on your preference. </p>



<p><strong>Food coloring</strong> &ndash; This is completely optional, but if you want the frosting to be green, you will need to add some food coloring! </p>



<p><strong>Peppermint extract</strong> &ndash; A little bit of peppermint extract goes a long way, so don&rsquo;t add too much! </p>



<p><strong>CHOCOLATE DRIZZLE</strong></p>



<p><strong>Semisweet chocolate chips</strong> &ndash; I prefer semisweet chocolate chips, but you can use dark chocolate if you prefer. </p>



<p><strong>Oil</strong> &ndash; Just a little bit of oil or shortening can help to thin out the chocolate enough to drizzle. </p>

<p>Preheat the oven to 350&deg; and line a large baking sheet with parchment paper (or two baking sheets). </p>

<p>Make sure to scrape down the walls with a spoon to get all the dry ingredients mixed together.&nbsp;</p>



<p>Use a cookie scoop to scoop one-tablespoon-sized balls and place them on the prepared baking sheet about 1-2 inches apart. Bake for 10 minutes. </p>

<p>Spread over the tops of the cookies with a knife and place in the freezer for about 20 minutes. Before you take the cookies out begin melting the chocolate. </p>



<p><strong>MELT THE CHOCOLATE</strong></p>



<p>In a small microwaveable bowl add the chocolate chips and oil and microwave for one minute. Stir and then microwave in 30-second intervals until the chocolate is melted and smooth. Add the melted chocolate into a small ziplock bag and close. Snip off a small piece of the corner of the bag and drizzle the cookies with the melted chocolate.&nbsp;</p>



<p>The chocolate will harden since the cookies are cold, so just let them sit for a few minutes. By then, the cookies should be ready to serve! If not serving right away, just store at room temperature in an airtight container until ready to serve.</p>

Make sure to scrape down the walls with a spoon to get all the dry ingredients mixed together.</div></li><li id="wprm-recipe-43028-step-1-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Use a cookie scoop to scoop one-tablespoon-sized balls and place them on the prepared baking sheet about 1-2 inches apart. Bake for 10 minutes. Let cool for about 5 minutes and then transfer to wire racks to cool completely. Stir and then microwave in 30-second intervals until the chocolate is melted and smooth. Add the melted chocolate into a small ziplock bag and close. Snip off a small piece of the corner of the bag and drizzle the cookies with the melted chocolate.</div></li><li id="wprm-recipe-43028-step-3-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">The chocolate will harden since the cookies are cold, so just let them sit for a few minutes. <h2 class="wp-block-heading">How to make The BEST cookies:</h2>



<p>After trying out multiple cookie recipes over many years, I have picked up several important tips for making the absolute BEST cookies!</p>



<ul class="wp-block-list">
<li>Make sure that the dough has enough flour. If it is too sticky, you may need to add a little bit more flour.</li>



<li>Spend a little extra time mixing the butter and sugar. Creaming them together for 2-3 minutes will improve the consistency of your cookies.</li>



<li>Preheat the oven. This will help your cookies turn out right every time!</li>



<li>Use a&nbsp;<a href="https://amzn.to/2usDloF" target="_blank" rel="noreferrer noopener nofollow">cookie scoop</a>! If you want all your cookies to be perfectly shaped and the same size, a cookie scoop is the way to go.</li>



<li>Use&nbsp;<a href="https://amzn.to/2E02Flc" target="_blank" rel="noreferrer noopener nofollow">parchment paper</a>&nbsp;or a&nbsp;<a href="https://amzn.to/2GukdeL" target="_blank" rel="noreferrer noopener nofollow">silicone baking mat</a>. Doing this will make it easy to remove the cookies from your cookie sheet so that you don&rsquo;t have to scrape them off the pan &ndash; they will just slide right off in perfect shape!</li>



<li>Don&rsquo;t overbake the cookies &ndash; when I take mine out of the oven, they still look slightly under-baked but they will continue to bake on the cookie sheet for a couple more minutes so that&rsquo;s ok!</li>

<h2 class="wp-block-heading">How long will decorated cookies be good for?</h2>



<p>These cookies can keep well for up to a week if kept stored in an airtight container at room temperature.</p>



<h2 class="wp-block-heading">Can I freeze frosted cookies?</h2>



<p>After applying the frosting to the cookies, go ahead and let them sit at room temperature for an hour or so to set. This allows the frosting to firm up a bit. Then place the cookies onto a baking sheet and freeze for 1-2 hours until solid before transferring to an airtight container with parchment paper between the cookie layers to prevent sticking. Remove the cookies and thaw them on the counter for a few minutes until soft enough to eat.</p>

<h2 class="wp-block-heading">HOW DO YOU MELT CHOCOLATE IN THE MICROWAVE?</h2>



<p>Melting chocolate in the microwave is easy if you go slowly. Always use a glass or ceramic bowl and chocolate that&rsquo;s not old or expired. To melt 1 cup of chocolate chips I&rsquo;d begin with 1 minute in the microwave. Stir the chocolate and see if the chocolate begins to melt. If needed, microwave for another 30 seconds and then stir again until smooth and creamy. </p>
