STRAWBERRY PIE COOKIES
These Strawberry Pie Cookies couldn’t be any easier to make. Use refrigerated pie crusts to make the “cookies” and then add strawberry pie filling on top. Cut strips of the pie crust to place over the top of the pie filling – make a traditional lattice pattern, or get creative and be as fancy as you want!
Ingredients in Strawberry Pie Cookies
Pie crusts: You can use 4 store-bought refrigerated pie crusts, or you can make a homemade pie crust recipe.
Pie filling: The recipe calls for one 21-ounce can of strawberry pie filling, but you can use homemade pie filling if you prefer. You can also use a different flavor of pie filling – cherry, raspberry, blueberry, and apple all work great!
Egg: You will need one egg to brush on the edge of each “cookie” so that the strips on the top will stick.
White sanding sugar: Sprinkle white sanding sugar over the egg-washed crust before baking. You can use granulated sugar if you don’t have any sanding sugar on hand.
HOW TO MAKE STRAWBERRY PIE COOKIES
Roll the pie crust out on a flat surface and use a cookie cutter to cut circles out of 2 of the pie crust rolls.
Add strawberry pie filling to the middle of each cookie. Unroll the last two pie crusts and use a pizza cutter or knife to make small strips. Brush the beaten egg around the edge of the cut-out pie crust, ensuring there’s no strawberry filling on the edges.
Take the pie crust strips and make a lattice pattern on the cookie, pressing the edges down on the egg-washed sides.
Brush the beaten egg over the top of each cookie once again and then sprinkle with the sanding sugar.
Bake, cool, and serve!
Variations on Strawberry Pie Cookies
Strawberry is a classic, but the beauty of these cookies is that you can easily change up the flavor by using a different kind of pie filling. Cherry, blueberry, apple, raspberry, lemon…they are all delicious! Make any kind of pie you want! Store-bought is easier, but you can use homemade pie filling if you prefer.
Can you use homemade pie crust?
I usually use store-bought pie crusts to save time, but you can definitely make your own. This All Butter Pie Crust recipe is absolutely delicious and works well for this recipe. You will have to triple the recipe to have enough pie crust to make enough cookies to use up all of the pie filling.
Tips and tricks for making Strawberry Pie Cookies
- No parchment paper? Spray the baking sheet with nonstick cooking spray.
- You can pick up the rest of the pie crust (after cutting the cookies out of it), roll it into a ball, and flatten it out with a rolling pin to cut out a few extra cookies!
- No cookie cutter? Use a cup that’s around about the same size!
How to store Strawberry Pie Cookies
If you aren’t serving the cookies shortly after cooling, they can be stored in an airtight container for 3-4 days. You can also freeze the cookies for up to 2 months.
