You are probably asking yourself, what exactly IS a scookie? We had a vision one day, because we love cookies as much as we love scones, we came up with the scookie! We have taken what we know and love about scones and combined them with our favorite cookie recipe, the result is an incredible dessert. These scookies are a tender, chewy and simply heavenly treat. Chocolate Chip Scookie Ingredients
Flour: For the structure of these cookies, you will need 2 cups of all-purpose flour.
Sugar: Use ⅓ cup of sugar for the cookie dough and 4 tablespoons for rolling the dough in, this will create the perfect sweet treat.
Baking powder: Add in 1 teaspoon of baking powder to help the scookies rise as they bake.
Baking soda: Another leavening agent needed for this recipe is ¼ teaspoon of baking soda.
Salt: Help balance all the amazing flavors by adding in ½ teaspoon of salt.
Butter: You will need ½ cup of butter, frozen or very cold, to make the dough rich tasting.
Sour cream: Using ½ cup of sour cream, or plain yogurt, will give these scookies a perfect amount of moisture.
Vanilla extract: Add in 1 tablespoons of vanilla extract to enhance the flavors in this recipe.
Egg: For more great flavor and texture, add in 1 large egg.
Chocolate chips: Using 1/2 cup of mini chocolate chips gives these scookies more great flavor and wonderful chocolate chunks in every bite.
Semi sweet chocolate chips: For the smooth drizzle on top of each scone, use 1/2 cup of semi sweet chocolate chips.
How to make Chocolate Chip Scookies
Prep
Start by preheating the oven to 400° F. Next, line a baking sheet with a silicon mat or parchment paper then set it aside.
Now measure out 4 tablespoons of sugar into a small bowl. The dough will be rolled in this before the baking process.
Dough
In a medium bowl, mix the flour, ⅓ cup sugar, baking powder, baking soda and salt. Then, grate the butter into flour mixture using the large holes of a box grater (mixture should resemble coarse meal.) This step sounds difficult but it is easy, but your hands might get a bit buttery. This step will take a couple minutes to grate the entire cube of frozen butter, but the effort is totally worth it.
Next, add in the sour cream, vanilla extract, egg and mini chocolate chips. Stir everything until the dough pulls from the side of the bowl and there are no crumbs on the bottom. The dough should be somewhat firm and sticky, but still be manageable.
Proceed to flour a countertop and use your hands to shape the dough into a rectangle that is about 1″ thick. What you are doing is dividing the dough, so it does not have to be perfect.
Then, use a pizza cutter to cut the rectangle in half lengthwise, so you now have 2 long sections. Now cut them in half length wise down the middle again. Lastly, cut each of those pieces 3 times vertically, creating 16 sections total.
Bake
Continue and gently pick up each section and roll it into a ball. Then, roll each ball in the small bowl of sugar previously prepared.
Place each piece of dough on the prepared cookie sheet. Place in the preheated oven and bake until golden brown, for about 12-13 minutes. Let the scookies cool for about 5 minutes while you prepare the chocolate topping.
Chocolate topping
In a small microwave safe bowl, melt the semi sweet chocolate chips for 45 seconds. Then, cover the bowl with a small plate and let sit for about 2-3 minutes. After that, add in 1 tablespoon of butter to the chocolate mixture and gently stir. Proceed to microwave another 15 seconds (if needed) until the chocolate is fully melted.
Using a spoon, drizzle the melted chocolate on top of each scookie. Let cool to set, serve and enjoy!
CAN I FREEZE CHOCOLATE CHIP SCONE COOKIES?
Yes, these cookies freeze wonderfully. Simply place the cookies into an airtight container and freeze for up to 3 months. Let the scookies thaw on the counter before eating so that they are softer enough to bite into. This only takes a few minutes for a single cookie or two.
HOW LONG ARE THESE COOKIES GOOD FOR?
You can keep these cookies in an airtight container at room temperature for up to 3 or 4 days. A trick my mother in law taught me is to put a piece of bread in the container, the cookies absorb the moisture from the bread and stay soft for a couple days longer.
