Frosted Mint Chocolate Cookies are soft cookies topped with mint frosting that taste very similar to the Girl Scout Thin Mint cookies that we all know and love. An easy cookie recipe that is great for St. Patrick’s Day, Christmas, or pretty much any time during the year!
I love the combination of chocolate and mint and have tried many recipes that combine these two flavors. I think these Frosted Mint Chocolate Cookies might be my current favorite. They taste so much like the Girl Scout Thin Mints, which I am obsessed with! These cookies have the perfect amount of chocolate flavoring and peppermint.
Ingredients in Frosted Mint Chocolate Cookies
CHOCOLATE COOKIES
Butter – You will need one stick of butter, softened to room temperature. For best results, use real butter.
Sugar – You can’t make cookies without sugar! You will only need white granulated sugar for these cookies.
Vanilla extract – The higher the quality of the vanilla, the better.
Egg – One large egg will bind all of the other ingredients together.
Flour – All-purpose flour works best in this cookie recipe. A gluten-free substitute will work if needed.
Cocoa powder – Unsweetened cocoa powder provides the chocolate flavor to the cookies.
Baking soda – Baking soda is the leavening agent in the cookies. For best results, make sure the baking soda isn’t old or expired.
Salt – Just a little bit of salt will help all of the other flavors to pop.
MINT FROSTING
Butter – Again, the butter should be softened to room temperature before adding to the other ingredients.
Powdered sugar – Powdered sugar creates a perfectly smooth and sweet frosting.
Milk – You will need about a tablespoon of milk to thin out the frosting to a spreadable consistency. You can add a little more or a little less based on your preference.
Food coloring – This is completely optional, but if you want the frosting to be green, you will need to add some food coloring!
Peppermint extract – A little bit of peppermint extract goes a long way, so don’t add too much!
CHOCOLATE DRIZZLE
Semisweet chocolate chips – I prefer semisweet chocolate chips, but you can use dark chocolate if you prefer.
Oil – Just a little bit of oil or shortening can help to thin out the chocolate enough to drizzle.
How to make Frosted Mint Chocolate Cookies
Preheat the oven to 350° and line a large baking sheet with parchment paper (or two baking sheets).
MAKE THE COOKIES
Add the butter and sugar to a large bowl and beat with an electric mixer for 2-3 minutes.
Add the vanilla and egg and beat for another 2-3 minutes.
Add the flour, cocoa powder, baking soda, and salt to the bowl and beat just until well combined.
Make sure to scrape down the walls with a spoon to get all the dry ingredients mixed together.
Use a cookie scoop to scoop one-tablespoon-sized balls and place them on the prepared baking sheet about 1-2 inches apart. Bake for 10 minutes.
Let cool for about 5 minutes and then transfer to wire racks to cool completely. While the cookies are cooling, make the frosting.
MAKE THE MINT FROSTING
Add the butter, powdered sugar, milk, peppermint extract, and several drops of green food coloring to a large bowl and beat with an electric mixer until smooth and creamy. Add more food coloring if desired.
Spread over the tops of the cookies with a knife and place in the freezer for about 20 minutes. Before you take the cookies out begin melting the chocolate.
MELT THE CHOCOLATE
In a small microwaveable bowl add the chocolate chips and oil and microwave for one minute. Stir and then microwave in 30-second intervals until the chocolate is melted and smooth. Add the melted chocolate into a small ziplock bag and close. Snip off a small piece of the corner of the bag and drizzle the cookies with the melted chocolate.
The chocolate will harden since the cookies are cold, so just let them sit for a few minutes. By then, the cookies should be ready to serve! If not serving right away, just store at room temperature in an airtight container until ready to serve.
How to make The BEST cookies:
After trying out multiple cookie recipes over many years, I have picked up several important tips for making the absolute BEST cookies!
- Make sure that the dough has enough flour. If it is too sticky, you may need to add a little bit more flour.
- Spend a little extra time mixing the butter and sugar. Creaming them together for 2-3 minutes will improve the consistency of your cookies.
- Preheat the oven. This will help your cookies turn out right every time!
- Use a cookie scoop! If you want all your cookies to be perfectly shaped and the same size, a cookie scoop is the way to go.
- Use parchment paper or a silicone baking mat. Doing this will make it easy to remove the cookies from your cookie sheet so that you don’t have to scrape them off the pan – they will just slide right off in perfect shape!
- Don’t overbake the cookies – when I take mine out of the oven, they still look slightly under-baked but they will continue to bake on the cookie sheet for a couple more minutes so that’s ok!
How long will decorated cookies be good for?
These cookies can keep well for up to a week if kept stored in an airtight container at room temperature.
Can I freeze frosted cookies?
After applying the frosting to the cookies, go ahead and let them sit at room temperature for an hour or so to set. This allows the frosting to firm up a bit. Then place the cookies onto a baking sheet and freeze for 1-2 hours until solid before transferring to an airtight container with parchment paper between the cookie layers to prevent sticking. Remove the cookies and thaw them on the counter for a few minutes until soft enough to eat.
HOW DO YOU MELT CHOCOLATE IN THE MICROWAVE?
Melting chocolate in the microwave is easy if you go slowly. Always use a glass or ceramic bowl and chocolate that’s not old or expired. To melt 1 cup of chocolate chips I’d begin with 1 minute in the microwave. Stir the chocolate and see if the chocolate begins to melt. If needed, microwave for another 30 seconds and then stir again until smooth and creamy.
