Mint Chocolate Cake Mix cookies are yummy any time of the year, but they are perfect for St. Patrick’s Day! The Dark Chocolate Mint M&Ms in the cookies are available all year, they aren’t just seasonal, so you can make these cookies any time you want!
If you haven’t tried the Dark Chocolate Mint M&Ms, go get some now! I normally don’t like dark chocolate, but these are amazing. They actually kind of taste like Andes mints, but in M&M form. There is also a crispy mint M&M that you can use, but I personally think the Dark Chocolate ones are soooo much better!
Ingredients in Mint Chocolate Cake Mix Cookies
- 1 box chocolate cake mix (any kind, about 15-16 ounces)
- 1 egg
- 1/2 cup butter, melted
- 1-2 cups Dark Chocolate Mint M&Ms
- 1/2 tsp mint extract (optional)
How to make Mint Chocolate Cake Mix cookies
Preheat oven to 350°.
Mix together the cake mix, egg and butter. The less mixing the better, and since the butter is melted, you can just use a large spoon to easily mix the cookie dough. I think that the mint flavor from the M&Ms is enough, but you if you want a little bit more mint flavor, add 1/2-1 tsp of mint extract to the cookie dough and mix in completely. Fold in the M&Ms.
Use a cookie scoop to scoop out 1 Tablespoon sized balls. Place the cookie dough balls on a baking sheet and bake for 8-9 minutes. Let the cookies cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
Cookies can be stored in an airtight container for 3-4 days, or in the freezer for up to a month.
Tips for making perfect cake mix cookies!
- Preheat the oven. This will help your cookies turn out right every time!
- Use a cookie scoop! If you want all your cookies to be perfectly shaped and have them all be the same size, a cookie scoop is the way to go.
- Use parchment paper or a silicone baking mat. Doing this will make it really easy to remove the cookies from your cookie sheet so that you don’t have to scrape them off the pan – they will just slide right off in perfect shape!
- Don’t over bake the cookies – when I take mine out of the oven, they still look slightly under baked but they will continue to bake on the cookie sheet for a couple more minutes so that’s ok!

Can you freeze cake mix cookies?
Yes, you can freeze cake mix cookies! You can freeze the baked cookies by cooling them completely and then wrapping in plastic and placing in a Ziplock bag in the freezer. When I freeze cookies, I prefer to freeze the dough in ready-to-bake balls, so that I can enjoy my cookies “freshly baked” when I am ready to make them. In order to do this, you will:
- Scoop the cookie dough into balls (cake mix cookies tend to be a little sticky in dough form so you may want to chill the dough for about an hour to make this step easier).
- Place the cookie dough balls on a piece of wax paper on a cookie sheet and place in the freezer for about an hour, until cookie dough balls are frozen.
- Take all of the frozen cookie dough balls and place in a Ziplock bag or an airtight freezer safe container. Put them back into the freezer until ready to bake.
- When you are ready, place the cookie dough balls on a prepared cookie sheet, 2 inches apart. I like to let the balls thaw for about 10-15 minutes and then bake according to normal instructions.

One word sums this up – enthusiasm! One of the best things about babies this age is that everything is so exciting to them. In this particular instance, she was throwing a ball for the dog to fetch and every time the dog got the ball, baby B would shriek in pure excitement. Two things to learn from this. One is that there is joy to find in everything and I think that the older we get, the more we miss. Especially in the small and simple things that seem tedious to us. Secondly, our dog isn’t very smart so it really is a pretty big accomplishment for her to be able to fetch correctly. 😂

Yum – these are so easy to make and delicious. We omitted the mint extract… just loved the cookies as they were. We also added in some crushed mint oreos. My kids thought they went to heaven! haha.
