We can’t get enough of these delicious vanilla cookies. Made with sweet vanilla bean paste these cookies are addictingly good! Double or triple the recipe during the holidays because you know there’s never enough when everyone grabs cookies by the handful.
Slice and Bake cookies
Making slice and bake cookies do require a little patience as there is chilling involved but the great thing about chilled cookie dough is that the flavors are always better. Giving the dough a little longer to rest and relax means the flavors have a chance to become more pronounce and awesome. Just imagine how wonderful these vanilla butter cookies are going to taste.
Vanilla butter cookies ingredients
-Butter: You will need 1 cup (2 sticks) of butter for a rich-tasting cookie that melts in your mouth.
-Sugar: Use 1/2 cup of granulated sugar for a sweet cookie.
-Flour: 2 cups of all-purpose flour is the base of this cookie dough recipe.
-Baking powder: Use 1 teaspoon of baking powder for the cookie to puff up nicely as it bakes.
-Salt: You will need ¼ teaspoon of salt to help enhance the flavors in these cookies.
-Vanilla bean paste: Use 2 teaspoons of vanilla bean paste for an incredible flavor in every bite.
-Turbinado sugar: To make our cookies look extra cool, use ⅓ cup of turbinado sugar (this is sugar in the raw and coarse in texture).
How to make slice and bake vanilla butter cookies
Cream together the butter and sugar in a bowl with an electric mixer until light and fluffy.
Add in the vanilla paste.
Add the flour, baking powder, and salt, mixing until a dough forms.
Divide the dough in half and place each half onto a piece of wax paper.
Shape each into a log and roll in the wax paper.
Place into the fridge to chill for at least 2 hours or overnight. For faster results, you can chill in the freezer for 30 minutes.
Heat your oven to 300 degrees F.
Line baking sheets with parchment paper.
Cut the dough logs into ¼ inch thick slices with a sharp knife and then roll the slices in the turbinado sugar, pressing it into the dough to coat all sides.
Arrange the slices onto the prepared baking sheets at least 2 inches apart.
Bake the cookies in the oven for 22-26 minutes.
Transfer to a wire cooling rack to cool. Enjoy!
How long do butter cookies last?
Once baked the cookies can last up to a week in an airtight container for up to a week. If still in chilled log form, the dough can be kept well wrapped and store in the fridge for up to 3 days or in the freezer for up to 3 months before needing to be baked.
