Holidays are the best time for baking, and these cookies are so fun to make! While your oven is occupied with other baking, you can use a waffle iron to make these delicious chocolate cookies. If you use a mini waffle maker, you can only make one cookie at a time, but if you have a larger waffle iron (with 4 squares), you can make 4 cookies at a time!

Ingredients in Christmas Chocolate Waffle Cookies
Butter – Make sure to melt the butter before adding to the other ingredients. For best results, use real butter. I always use salted, but unsalted will work just fine too!
Sugars – You will need granulated sugar and brown sugar for the recipe. Make sure your brown sugar is soft and fresh!
Eggs – Two large eggs will bind all of the other ingredients together.
Vanilla extract – Just a little bit of vanilla makes most cookie recipes even better! The higher the quality of the vanilla, the better!
Cocoa powder – Unsweetened cocoa powder is what gives the cookies that rich chocolate flavor!
Flour – All-purpose flour works best, but you can use a gluten-free substitute if preferred.
Salt – A tiny bit of salt will help all of the other flavors to pop!
Chocolate – Melt 1/2 cup semi-sweet or milk chocolate chips to make a simple drizzle for the top of the cookies. Not only is it delicious, but it is needed for the sprinkles to stick!

How to make Christmas Chocolate Waffle Cookies
In a large bowl, add the melted butter, sugar, brown sugar, eggs, and vanilla extract. Mix until the wet ingredients are fully combined.
Add the cocoa powder, flour, and salt to the same bowl and mix until the dough is smooth.
Let the dough rest for 15 minutes. This allows the ingredients to settle and will give the cookies a better texture when cooked.
While the dough is resting, preheat the electric waffle maker. Make sure it is fully preheated before adding the dough to prevent sticking and to achieve a crispy texture on the outside.
Once it is hot, place one tablespoon of the dough in the waffle maker to create small-sized cookies. Cook for 2 to 3 minutes, or until cooked fully in the center. If you like crispier cookies, cook a little longer. (Each waffle maker will be a little different so just make sure to keep a close eye on the first couple of cookies to make sure you know how long your waffle maker will take to get the cookie cooked the way you prefer.)
Remove the cookies from the waffle maker and place them on a cooling rack to cool and firm up a bit.
Place the chocolate chips in a microwaveable dish and microwave for 30 seconds. Stir and then microwave for another 15 seconds. Continue in 15-second intervals, stirring in between each interval until the chocolate is melted and smooth. Don’t overcook it!
Drizzle melted chocolate on top and then add some holiday sprinkles before the chocolate hardens.

- Refrigerator: If you live in a hot or humid climate, it might be best to store your cookies in the refrigerator. This will help keep them fresh for longer. However, keep in mind that refrigeration can cause some cookies to become hard or lose their texture.
- Freezer: If you want to keep your cookies for an extended period, freezing them is the best option. Make sure to wrap them tightly in plastic wrap or aluminum foil and place them in an airtight container or freezer bag. When you’re ready to eat them, simply thaw them at room temperature for a few hours.

It’s pure vanilla and contains no alcohol, which I like because I don’t like the taste of extracts made with alcohol. Each time I try another, I go back to Totonac’s quickly afterward; it’s so good! I also love using Nielsen Massey Vanilla Bean Paste. Again, this one has the best flavor by far!
