Flourless Double Chocolate Cookies are soft, fudgy and have absolutely no flour in them! The perfect flourless cookie recipe, whether you need a gluten-free cookie or even if you just don’t have any flour on hand!
Flourless Double Chocolate Cookies have just the right amount of chocolate flavor. I was a little bit skeptical about making cookies without flour, and was even more skeptical when I mixed up the batter and saw how runny it was. I had very little faith that the batter would end up making anything resembling a cookie, but was actually very surprised to see the results!
Even though the batter is much runnier than typical cookie dough, the cookies were very well formed and didn’t spread into each other on the cookie sheet like I anticipated. Not having any flour does result in a much flatter cookie than what I’m used to, but the cookies were still soft and chewy even a couple days later. So if you need a chocolate fix but don’t have flour, or you need a good tasting cookie recipe that doesn’t have flour, this recipe is a great option!
Ingredients in Flourless Double Chocolate Cookies
2 1/2 cups powdered sugar
3/4 cups unsweetened cocoa powder
1/4 tsp salt
4 large egg whites (about 3/4 cup liquid egg whites)
1/2 tsp vanilla extract
1 1/2 cups semi-sweet chocolate chips
How to make Flourless Double Chocolate Cookies
Preheat oven to 350°. Line baking sheets with silicone baking mats or parchment paper. If using parchment paper, you’ll want to spray a little bit of non-stick cooking spray on top of the parchment paper as well. This cookie dough is very runny and can stick very easily!
In a large bowl, mix together the powdered sugar, cocoa powder and salt.
Add egg whites and vanilla extract and mix just until combined with a spoon. Fold in the chocolate chips.
Use a cookie scoop to scoop batter onto prepared baking sheets. Make sure to leave at least an inch (or more) between cookies. They really won’t spread much more while baking.
Bake for about 10-12 minutes. Let the cookies cool completely before transferring to a plate.
How to make powdered sugar
If you don’t have powdered sugar on hand, it is super easy to make. Just put granulated sugar in a blender and blend until it looks like powdered sugar- it doesn’t take very long! Works great in a pinch!
Tips for making perfect cookies
- Preheat the oven. This will help your cookies turn out right every time!
- Use a cookie scoop! If you want all your cookies to be perfectly shaped and have them all be the same size, a cookie scoop is the way to go.
- Use parchment paper or a silicone baking mat. Doing this will make it really easy to remove the cookies from your cookie sheet so that you don’t have to scrape them off the pan – they will just slide right off in perfect shape!
- Don’t overbake the cookies – when I take mine out of the oven, they still look slightly underbaked but they will continue to bake on the cookie sheet for a couple more minutes so that’s ok!

This recipe doesn’t work out. I know how to follow a recipe. This recipe gave me chocolate soup. There is no way to make cookies out of cake batter. I added more sugar and cocoa until I got a better dough texture. They all just melted together on the cake pan. DO NOT USE THIS RECIPE. I wish I could get my money back for all the ingredients that I bought. The person responsible for this recipe deserves to be caned publicly!

So sorry to hear that these didn’t work out for you Amy. Sounds like something definitely went wrong. I’ve made them many times and yes, the batter is very runny (as shown in the pictures), but the cookies should hold their shape quite well. I was skeptical the first time I made them, but they did turn out quite well and have every time since.
