HOW TO MAKE MINT CHOCOLATE CHIP MERINGUE COOKIES
In a large bowl, use an electric mixer to beat the egg whites, salt, cream of tartar, mint extract, and food coloring until soft peaks form.
Add the sugar a tablespoon at a time, beating on high until stiff glossy peaks form and the sugar is dissolved.
Very gently fold the chocolate chips into the mixture.
Drop by rounded teaspoonfuls onto a baking sheet lined with parchment paper. Bake until firm to the touch.
Turn the oven off and leave the meringues in the oven for 90 minutes. Transfer the meringues to wire racks and then store them in an airtight container.

Also important note- Don’t let them absorb too much moisture as they thaw. Leave them on the counter uncovered in a room that isn’t too humid to thaw. It’s easy to do this by just placing them on a plate and just waiting a few minutes.
