In a large bowl, whisk the powdered sugar, butter, and vanilla using an electric hand whisk.
In another bowl, mix together the flour, salt and spices. Add the flour mixture to the butter mixture, whisk to form the dough.
Chill the dough in the fridge for at least 2 hours.
Pre-heat the oven to 350°F. Line two baking trays with parchment paper and spray lightly with cooking spray.
Roll out the dough to ½ inch thick, and cut out cookies into desired shape. Place on the prepared baking sheets.
