Chocolate and orange are flavors that are commonly combined around the holidays, but they taste great together all year long. These cookies look impressive but are made with very common ingredients and are so easy to make too!
FUDGE TOPPED ORANGE COOKIES
Fudge Topped Orange Cookies are reminiscent of the chocolate orange balls that are so popular around the holidays. The orange cookies are made with grated orange peel, orange extract, and a few other basic cookie ingredients. The fudge topping is made with marshmallow cream and makes the perfect topping for the cookies.
INGREDIENTS IN FUDGE TOPPED ORANGE COOKIES
Butter – Real butter works best. Make sure the butter is softened to room temperature before creaming with the sugar.
Sugar – You will only need granulated sugar to make the orange cookies.
Egg – You will need 1 egg and 2 egg yolks to help bind all of the other ingredients together.
Orange peel – Use a zester to get two teaspoons of orange zest to add to the cookie dough.
Orange extract – You must add orange extract to most of the orange flavor in these cookies. Just don’t add too much – it’s pretty strong stuff!
Flour – All-purpose flour works best, but a gluten-free substitute will work well too.
Baking soda – Baking soda is the leavening agent in the cookies. For best results, make sure the baking soda isn’t old or expired.
FUDGE TOPPING
Marshmallow cream – A 7-ounce jar of marshmallow cream provides a thick consistency to the fudge topping.
Sugar – Yep, more sugar! You definitely need some sugar to make the fudge.
Evaporated milk – Evaporated milk thins out the fudge a little bit, while keeping it rich and creamy.
Butter – Again, real butter works best.
Semi-sweet chocolate chips – A cup of semi-sweet chocolate chips adds the chocolate to the fudge, so don’t leave these out!
Vanilla – Again, the higher the quality of the vanilla, the better.
HOW TO MAKE FUDGE TOPPED ORANGE COOKIES
Preheat oven to 300°.
MAKE THE ORANGE COOKIES
In a large bowl, cream together butter and sugar for 2-3 minutes.
Beat in the egg, egg yolks, orange peel, and orange extract for another 2-3 minutes.
In a separate bowl, mix together the flour and baking soda. Add the flour mixture to the other ingredients and mix just until combined.
Use a cookie scoop (2 tbsp) to scoop on cookie sheets that are lined with parchment paper or silicone baking mats. Bake for 21-23 minutes or until light golden brown. Let cool for a few minutes before transferring to wire racks to cool completely.
MAKE THE FUDGE TOPPING
While the cookies are cooling, make the fudge topping.
In a large saucepan, combine the marshmallow creme, sugar, milk, and butter. Over medium heat, bring the mixture to a boil and let it boil for 5 minutes, stirring constantly.
Remove from heat and add the chocolate chips and vanilla.
Stir until the chocolate chips are melted.
Spread on top of the cookies once they are mostly cooled.
How to make perfect cookies
- Make sure that you have enough flour in the dough. If the dough is too sticky, you may need to add a little bit of flour.
- Do not melt the butter! Soften the butter to room temperature.
- Spend a little extra time mixing the butter and sugar. Creaming them together for 2-3 minutes will improve the consistency of your cookies.
- Preheat the oven. This will help your cookies turn out right every time!
- Use a cookie scoop! Using a cookie scoop will ensure that all of the cookies are uniform in shape and size.
- Use parchment paper or a silicone baking mat. Doing this will make it really easy to remove the cookies from your cookie sheet so that you don’t have to scrape them off the pan – they will just slide right off in perfect shape!
HOW DO YOU SOFTEN BUTTER TO ROOM TEMPERATURE?
The best way to soften butter is to set it out for a few hours before you make your cookies. Since most of us (or maybe just me!) aren’t that prepared or don’t think that far in advance, there are a few tricks to softening butter perfectly in just a matter of minutes.
My favorite way to soften butter is in the microwave. It’s definitely fast, but you do have to be very careful not to melt it. Just put the whole stick of butter in the microwave (as long as it isn’t wrapped in foil!) and microwave for about 6-7 seconds. If the butter is still really cold, try another 5-7 seconds and check it again. You may need a few intervals, and if the butter is starting to feel soft, you can shorten the final interval to just a few seconds to make sure it doesn’t start melting.
I actually prefer to use the defrost setting on my microwave – I don’t know exactly what that mode does differently, and it takes a little bit longer (closer to 30 seconds), but it seems to be easier to get the butter to soften without melting.
