We love these little bites so much it’s easy to see why they don’t last long around here. Don’t be surprised if you find yourself eating them by the handfuls because they’re pretty hard to resist.
What are peanut butter cookie bites?
A simple combination of chocolate chip cookies, peanut butter, and powdered sugar for a sweet and creamy textured truffle bite that’s as easy to make as it is to enjoy. With a food processor, you can have the batch mixed up in no time flat and with very little work. Less time making, more time eating- just my kind of recipe. 😉
Ingredients for peanut butter cookie bites
-Cookies: We want to use an entire 13oz package of crunchy chocolate chip cookies. About 33 Chips Ahoy Originals will work perfectly.
-Peanut butter: Using 2 cups of creamy peanut butter we can have a rich tasting and creamy treat.
-Powdered sugar: We want to use 1 cup of powdered sugar in these bites to help them remain creamy while adding a nice sweetness to the mix.
How to make peanut butter cookie bites
Finely chop an entire package of cookies in a food processor.
Measure out 1 3/4 cups of cookie crumbs and place them into an electric mixing bowl. Reserve the remaining crumbs for later in a shallow bowl. (A pie plate might work great).
Add your powdered sugar to the measured cookie crumbs and mix well.
Add in the peanut butter and mix again, the mixture will be stiff.
Line a baking sheet with parchment paper and clear some space for it in the fridge.
Use a tablespoon measure to scoop out little balls of dough and then roll them into balls.
Roll each ball until smooth, with your hands. Then roll the balls into the reserved crumbs.
Place them on the prepared baking sheet.
Place the baking sheet in the fridge for 1 hour or until the bites are firm. If necessary, cover and keep covered in the fridge until ready to serve.
Place the bites into small mini muffin paper liners and serve. Enjoy!
How long are peanut butter bites good for?
These cookies can be prepared and last (covered) in the fridge for up to a week or they can be frozen for an extended period of time. Store in an airtight container and enjoy these bites soon or take your time and savor every last bite.
Can I use crunchy peanut butter?
You definitely could use crunchy peanut butter if you chose to but the overall texture may be a little different. If that’s fine by you then go for it. You really can’t go wrong when you use your favorite peanut butter in desserts. Yum!
